Cookie Monster - White Chocolate Macadamia Cookie

I still remember the day I suddenly realize I actually have an oven at home and I can bake something. I chose to make cookie on my very first baking product, well I cannot say it turns out very good but it did make me want to try make more recipe. The fun part of making cookie is you can do whatever flavor and shapes as you like or add whatever nut or dried fruit you like.Like for last Christmas, I just made some snowman, Christmas tree and socks for my friends as a gift.

My family Number 1 favorite cookie is white chocolate & macadamia cookie, I usually like dark chocolate only. But when it come to macadamia, it have to be with white chocolate so that the cocoa flavor won’t overcome the unique fragrant of macadamia nut. So please enjoy this homemade gourmet style cookie with a cup of coffee, the only thing you need to worry is you might finish them all before you notice. (Because it too yummy!)

Ingredient

125g Butter softened
110g Brown sugar
1 egg
1 teaspoon Vanilla essence
1 cup plain flour (sifted)
1 cup self-rising flour (sifted)
150g white chocolate chips
1 cup unsalted macadamia nut (roughly chopped)

1) Line a baking tray with baking paper and preheat oven to 180C.

2) Beat the butter and brown sugar until thick and creamy.

3) Add egg and vanilla essence and continue to beat until well combined.
4) Fold in flours, white chocolate and nuts.

5) Beat with low speed until it forms a chunky mixture.

6) Scoop the cookie mixture with tablespoon and gently press down to flatten the cookie. Repeat until finish all the cookie mixture.

7)Bake for 15-20 minutes or until cookie become golden brown.

8) Remove from oven and transfer to wire rack to cool completely before serve.

Bon Appetite.
