The first time I tried Red wine poached Pear, I thought
it must be a complicate dessert to make which make the pear has this beautiful
deep red colour. However never let your eye fool you, it actually one of the
easiest dessert I have ever made and also one of the most fancy and elegant dish.
It is unbelievably easy and simple that you cannot believe it so why pay so
much to have it in fancy restaurant while you can make your own red wine
poached pear at home.
Pear is one of my favourite fruit while making desserts;
please see my other recipe Pear Tarte Tatin. It has a relatively long season
from early autumn til summer which is pretty much all year round like apple. Unlike
Apple you would normal prefer to eat fresh and crunchy, pear need to wait until
it ripe and tender and that the best time to have it. As the pear will become
sweeter, tender and juicier, it best just eats it like that and also great for
dessert.
Whenever I’m making dessert from pears, I normally reduce
the amount of sugar I add because I love the natural sweetness from the pears
and it taste way better then sugar. Also I would choose full bodied or dry red
wine such as Cabernet Sauvignon, Merlot or Shiraz which can give the pear a
better flavour and colour of the wine after you boil it. As lighter wine like Rosé or Pinot Noir will be
easily carried out while you boil the pears.
I think this is a great for a house dinner party that you
can make it 2 days in advance, so the pear can have the beautiful ruby red colour
and surprise your friends and family with this stunning red wine poach pear to
finish the party. It is best suit with ice cream or if you want a fancier
version, you can match it with sabayon. Hope you enjoy this easy stunning

Ingredients
4 Ripe Pears
1 Cup full bodied/Dry Red Wine
1 Cup Water
3 Tablespoon Sugar
1 teaspoon Mixed Spice powder
1) Combine red wine, water, sugar and mixed spice together
in a pot.
2) Peel the pears but keep the stalk intact. Put the pears into
the red wine and put on stove to boil.
3) Once it starts boiling, turn down the heat into medium
and simmer for 10 minutes, turn the pear and simmer for another 10 minutes.
Your pears should be tender by now, if not simmer for another 5 minutes.
4) Take the pear out and arrange in the container, do not
overlap with each other. Keep boiling the red wine until it reach a light syrup
texture.
5) Pour the red wine mixture back in with the pears. Once it
cool down, put it in the fridge and leave it overnight. Turn the pear around
for the side that not marinate with red wine.
6) Serve with ice cream or sabayon as desired.
