Simple Soft and Fluffy Buttermilk Scone

Scone has always been one of most frequent recipe I baked very now and then as breakfast or afternoon tea. Even since I was young, I always love scone so much and whenever I went to different hotel or café for High Tea (or should call Afternoon Tea as per British), all I want from is the soft fluffy scone with lot of jam and cream on top. However, it not easy to found good scone, since it is best when they freshly bake and serve it warm.


I always believe simple is the best, which also apply to my liking to simple scone without any fancy flavoring, which has the buttery fragrant is the best.  As soon as I discovered this recipe I had fallen in love with it and I stop having scone when I eat out.  In this recipe, the scone is soft, light and fluffy and because not many butter is used, it is also more a good choice of snack while you on diet and still want to treat yourself a good afternoon tea without feeling too guilty.


Hope you enjoy this simple soft fluffy scone with a cup of traditional English Breakfast Tea, which almost make you feel like you are having afternoon tea in London.

Ingredient


2 cup Self raising flour

1 tablespoon sugar

A pinch of salt

70g butter, Chilled

¾ cup Buttermilk

1) Sift the flour and combine with sugar and salt.


2) Cut the butter into cube and use cutter to chop the butter into the flour until it become fine crumble.


3) Make a well in the middle and pour in buttermilk.


4) Combined the buttermilk with flour and transfer to table for kneading.


5) Knead until the dough reaches a smooth surface. Wrap with cling wrap paper and rest in the fridge for 30 minutes.


6) Pre-heated oven to 210C. Lightly flour the bench and roll out the dough into 2cm thick.


7) Grease the cutter with flour and cut out the scone.

8) Brush the top with buttermilk.
9) Bake for 13-15 minutes until the top reach golden brown color, transfer to wire to cool down.
10) erve with Whipped cream and your favorite jam.
